  • 100 grams Rice Noodles Can substitute with soba noodles or whole wheat spaghetti if needed.

For the Sauce

  • 2 tablespoons Lime Juice Freshly squeezed is best for maximum flavor.
  • 3 tablespoons Soy Sauce Opt for low-sodium if you're watching your salt intake.
  • 1 tablespoon Sesame Oil Olive oil can be used as an alternative.
  • 2 cloves Minced Garlic Fresh garlic is preferred.
  • 1 teaspoon Red Pepper Flakes Adjust to taste or swap with fresh sliced jalapeños.

For Garnish

  • 1/4 cup Cilantro Chopped; parsley is a substitute if cilantro isn’t preferred.
  • to taste Salt Adjust after mixing the sauce.

Cooking Procedure

  • Boil Water: Bring a large pot of water to a rolling boil, add rice noodles, and cook according to package instructions.
  • Drain and Rinse: Drain the noodles in a colander and rinse under cold water to stop cooking.
  • Whisk the Sauce: In a mixing bowl, whisk together lime juice, soy sauce, sesame oil, minced garlic, and red pepper flakes.
  • Combine Noodles and Sauce: Add drained noodles to the bowl and toss to coat.
  • Add Cilantro: Stir in chopped cilantro until evenly distributed.
  • Taste and Adjust: Taste the noodles and adjust seasoning with salt if necessary. Serve immediately.

Notes

Optional: Garnish with additional cilantro for extra freshness before serving.
