  • 1 cup Greek Yogurt or dairy-free yogurt for vegan
  • 1 cup Shredded Cucumber squeeze out excess water
  • 2 tablespoons Lemon Juice adjust to taste
  • 1 tablespoon Dill or fresh mint
  • 1 teaspoon Garlic Powder or fresh minced garlic

Salad

  • 2 cups Shredded Chicken rotisserie chicken for quick prep
  • 1 small Red Onion or scallions
  • 1/2 cup Kalamata Olives omit if cutting sodium
  • 1/2 cup Crumbled Feta or vegan cheese
  • 1/4 cup Fresh Parsley or cilantro for a twist

  • In a large mixing bowl, combine Greek yogurt, shredded cucumber (make sure to squeeze out excess water), lemon juice, dill, garlic powder, salt, and pepper. Mix until smooth and creamy.
  • Gently add shredded chicken, red onion, kalamata olives, crumbled feta, and fresh parsley to the tzatziki base. Stir everything together until evenly coated.
  • Taste your salad and adjust seasoning with more lemon juice or salt as needed.
  • Let the salad chill in the refrigerator for 30 minutes before serving, or enjoy right away.
