Ingredients
  

For the Chicken

Preparation

  • In a medium bowl, mix olive oil, chili powder, paprika, cumin, garlic powder, onion powder, salt, pepper, and lime juice until well combined. Toss the sliced chicken in this marinade, ensuring it's fully coated.
  • Heat a skillet over medium-high heat. Add the marinated chicken and cook for 5–6 minutes, or until it’s browned and cooked through. Remove the chicken from the skillet and let it rest.
  • In the same skillet, drizzle a little more olive oil and add the sliced bell peppers and onion. Sauté for around 4–5 minutes, stirring occasionally, until the veggies are tender-crisp and vibrant in color.
  • Return the cooked chicken to the skillet with the sautéed vegetables. Toss everything together for about 1 minute, allowing the flavors to meld beautifully.
  • Place a generous scoop of cooked rice into individual serving bowls. Top with the chicken and vegetable mixture, then sprinkle on your choice of toppings.
