How to Make Bok Choy Fried Rice with Bacon

  • Rinse the short-grain rice until the water runs clear. Combine with water in the rice cooker and cook until fluffy.
  • In a large non-stick pan, heat olive oil over medium heat. Add smoked shoulder bacon and sauté until golden brown and crispy (5-7 minutes). Set aside.
  • Add bok choy white stems to the pan, stir-fry for 3-4 minutes. Toss in cooked rice, crispy bacon, and bok choy leafy greens. Sprinkle salt to taste and stir-fry until warmed through.
  • Press the rice mixture into the bottom of the pan. Cook undisturbed for 2-3 minutes until a golden crispy crust forms, then serve.

Notes

For extra flavor, drizzle with soy sauce or chili oil before serving. Adjust salt based on bacon's saltiness.
