Cooking Steps

  • Preheat the oven to 350°F (175°C).
  • In a bowl, mix together the tomato paste, honey, pomegranate molasses, Dijon mustard, and spices to create the sauce.
  • Heat olive oil in a Dutch oven over medium heat and sear the chicken thighs until golden brown (5-7 minutes).
  • Add chopped sweet peppers, red onion, green olives, Kalamata olives, and orange slices to the pan.
  • Pour the spice mixture over the chicken and vegetables, ensuring everything is well coated.
  • Cover with a lid and bake for 50 minutes, stirring halfway through.
  • After 50 minutes, lower the oven temperature to 300°F (150°C) and bake for an additional 45 minutes.
