  • 1 lb beef sausage substitution: turkey or plant-based sausage
  • 1 cup long-grain white rice rinsing helps remove excess starch
  • 1 onion adds sweetness and depth
  • 1 bell pepper any color works, or use diced carrots or zucchini
  • 3 cloves garlic enhances flavor and aroma
  • 1 can diced tomatoes fire-roasted tomatoes add flavor
  • 2 cups chicken broth vegetable broth is a great alternative
  • 2 tbsp olive oil used for sautéing
  • 1 tbsp Italian seasoning a blend of herbs adds depth
  • 1 tsp paprika introduces smokiness and spice

Instructions
 

Directions

  • Heat the olive oil in a large skillet over medium-high heat.
  • Add the sliced beef sausage and brown for 5-7 minutes.
  • Toss in the diced onion and bell pepper; sauté for 4-5 minutes.
  • Add minced garlic and cook for another minute.
  • Stir in the rinsed long-grain white rice and toast for 1-2 minutes.
  • Pour in the diced tomatoes with juices and chicken broth.
  • Mix in Italian seasoning, paprika, salt, and pepper.
  • Return the browned sausage to the skillet, bring to a boil, then reduce heat to low and cover.
  • Let simmer for 18-20 minutes until the rice is tender.
  • Let rest off the heat for 5 minutes, then fluff with a fork.

Notes

Serve with a sprinkle of fresh parsley for added color and flavor.
