  • 1/4 cup Lemon Juice Lime juice can be used as a substitute.
  • 2 tablespoons Fresh Ginger Use ground ginger at 1:3 ratio if needed.
  • 2 cloves Garlic
  • 2 tablespoons Olive Oil Avocado oil can be used as an alternative.
  • 1 tablespoon Honey Maple syrup or stevia can substitute for a lower-glycemic option.
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 1 teaspoon Red Pepper Flakes Adjust to taste.

Pineapple Mango Salsa Ingredients

  • 1 cup Pineapple Fresh or canned; drain canned well.
  • 1 cup Mango
  • 1/2 cup Red Onion
  • 1 piece Jalapeño Adjust or omit based on heat preference.
  • 1/4 cup Cilantro
  • 2 tablespoons Lime Juice Lemon juice can work as a substitute.
  • 1 pinch Salt

  • Whisk together lemon juice, minced ginger, garlic, olive oil, honey, salt, pepper, and red pepper flakes in a mixing bowl until well combined.
  • Place chicken breasts in a ziplock bag, pour the prepared marinade over them, seal the bag, and refrigerate for at least 30 minutes, up to 4 hours for maximum flavor.
  • In a separate bowl, mix diced pineapple, mango, red onion, jalapeño, cilantro, lime juice, and a pinch of salt. Stir well and adjust seasonings according to your taste.
  • Before cooking, bring the marinated chicken to room temperature and preheat your grill or skillet to medium-high heat.
  • Grill each chicken breast for about 6-7 minutes per side until the internal temperature reaches 165°F (74°C), ensuring not to move them frequently for an excellent sear.
  • After cooking, let the chicken rest for 5 minutes. Slice it and serve topped with the refreshing pineapple mango salsa.

Notes

For a milder dish, feel free to omit the jalapeño or use less red pepper flakes in the marinade. Serve with refreshing sides for a complete meal.
