How to Make Lemon Chicken Skewers

  • Cut boneless, skinless chicken breasts into uniform 1-inch cubes and place them in a large bowl.
  • In a separate bowl, whisk together olive oil, fresh lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  • Toss the chicken cubes in the marinade to coat well, cover, and refrigerate for at least 30 minutes or up to 2 hours.
  • Soak wooden skewers in water for 30 minutes. Thread marinated chicken onto skewers with gaps for even cooking.
  • Grill on medium-high heat for 4-6 minutes per side until cooked through, or broil/pan-sear until golden.
  • Allow skewers to rest for a couple of minutes, then serve hot with fresh lemon wedges.

Notes

Garnish with fresh herbs for extra color and flavor. Avoid over-marinating to prevent mushiness.
