For the Chicken and Broth

  • 1.5 pounds Chicken Thighs Choose thighs for juiciness and rich flavor.
  • 3 pieces Dried Guajillo Chiles Remove stems and seeds.
  • 2 pieces Dried Ancho Chiles Add sweetness and depth.

  • 1 medium White Onion Quarter before blending.
  • 4 cloves Garlic Cloves Use whole, peeled.

For the Tacos

  • 8 pieces Corn Tortillas Smaller size recommended.
  • 1 cup Shredded Cheese Oaxaca or Mozzarella.

For the Toppings

  • 1 cup Fresh Cilantro Lifts flavors beautifully.

Directions

  • Toast the guajillo and ancho chiles in a skillet over medium heat for about 30 seconds on each side until fragrant.
  • Soak the toasted chiles in boiling water for 10-15 minutes to soften.
  • In a blender, combine the soaked chiles, quartered onion, garlic cloves, and chicken broth. Blend until smooth.
  • Pour the blended mixture into a pot and simmer for 3-4 minutes.
  • Add chicken thighs, bay leaves, and salt to the pot. Simmer for 25-30 minutes until chicken is cooked through.
  • Shred the chicken and return it to the pot to soak in the flavors for 5 minutes.
  • Dip corn tortillas in the consommé, fill with shredded chicken and cheese, fold, and cook until crispy.
  • Serve the tacos with a bowl of consommé for dipping, garnished with diced onions, cilantro, and lime wedges.
