For the Avocado Corn Salsa

  • 1 cup Cherry Tomatoes Fresh preferred.

  • 1/2 cup Red Onion Chopped.
  • 1 piece Red Bell Pepper Chopped.
  • 1 piece Jalapeño Pepper Optional for heat.
  • 1/4 cup Cilantro Chopped.
  • 1 clove Garlic Minced.
  • 1 tablespoon Lime Juice For enhancing flavors.

Instructions
 

Marinade and Cook Chicken

  • Prepare the Marinade by whisking together olive oil, lime juice, lime zest, chili powder, brown sugar, and salt and spices in a mixing bowl.
  • Marinate Chicken by coating the chicken breasts in the marinade. Cover and refrigerate for at least 15-30 minutes.
  • Cooking Options: Grill for 5-7 minutes per side or cook in a heated skillet for 3-5 minutes per side until golden and cooked through.
  • Let Chicken Rest for 5 minutes after cooking.

Prepare Avocado Corn Salsa

  • Combine chopped avocados, cherry tomatoes, fresh corn, red onion, and red bell pepper in a bowl.
  • Add jalapeño and cilantro if desired, then squeeze in lime juice and sprinkle with salt. Toss gently.

Serve
