For the Chicken Marinade

  • 4 pieces Boneless, skinless chicken breasts
  • 1/4 cup Olive oil or avocado oil
  • 2 tablespoons Fresh lime juice
  • 1 tablespoon Lime zest
  • 1 tablespoon Chili powder adjust to taste
  • 1 tablespoon Brown sugar or honey
  • 1 teaspoon Salt sea or kosher
  • 1 teaspoon Ground cumin or taco seasoning
  • 1 teaspoon Smoked paprika or regular paprika
  • 1 teaspoon Onion powder
  • 1 teaspoon Garlic powder
  • 1/2 teaspoon Chipotle chili powder optional
  • 1/2 teaspoon Black pepper to taste

For the Avocado Corn Salsa

  • 2 pieces Avocados ripe but firm
  • 1 cup Cherry tomatoes or Roma tomatoes fresh or canned
  • 1 cup Fresh corn or canned corn
  • 1/4 cup Red onion
  • 1 pieces Red bell pepper other colors optional
  • 1 pieces Jalapeño pepper optional
  • 1/4 cup Cilantro optional
  • 1 clove Garlic fresh minced
  • 1 tablespoon Additional lime juice for flavor
  • Spices for salsa to taste

How to Make Fiesta Lime Chicken

  • In a mixing bowl, whisk together olive oil, fresh lime juice, lime zest, chili powder, brown sugar, and a sprinkle of salt and spices.
  • Coat the boneless chicken breasts in the marinade and let them rest in the refrigerator for at least 15-30 minutes.
  • Preheat your grill to medium-high heat and cook each chicken breast for about 5-7 minutes on each side.
  • Alternatively, heat a skillet over medium-high heat and sear the chicken for 3-5 minutes on each side.
  • In a bowl, combine chopped avocados, cherry tomatoes, corn, red onion, and bell pepper. Add any desired jalapeño and cilantro, then squeeze in lime juice and sprinkle with salt.
  • After cooking, let the chicken rest for 5 minutes before slicing.
  • Serve warm, topped with the Avocado Corn Salsa.

Notes

For garnish, consider adding fresh cilantro. Marinate chicken longer for enhanced flavor.
