  • 4 cups Sweet Potatoes peeled and chopped
  • 2 tablespoons Extra Virgin Olive Oil
  • 2 tablespoons Melted Butter

For the Honey Glaze

  • 1/2 cup Honey preferably local
  • 2 tablespoons Lemon Juice
  • 1 tablespoon Lemon Zest

Optional Add-ins

  • 1 teaspoon Cinnamon or Cayenne Pepper
  • 1/4 cup Chopped Nuts or Dried Cranberries

Directions

  • Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Peel and chop the sweet potatoes into bite-sized pieces. Sprinkle them lightly with salt.
  • In a small saucepan, combine melted butter and extra virgin olive oil over low heat. Stir in lemon juice, zest, and honey, simmering for about one minute.
  • Pour the warm glaze over the chopped sweet potatoes and toss until each piece is evenly coated.
  • Spread the sweet potatoes in a single layer on the prepared baking sheet. Roast for approximately 25 minutes, or until tender and caramelized.
  • Serve warm, optionally drizzled with more honey.
