Ingredients
  

For the Marinade

  • 1 lb deveined shrimp fresh or frozen
  • 1 cup coconut milk full-fat or light
  • 3 tbsp red curry paste adjust based on heat preference
  • 3 cloves garlic minced
  • 1 tbsp ginger minced

For the Skewers

  • 1 cup bell peppers chopped
  • 1 cup red onion wedges
  • 1 cup green beans trimmed

For Serving

  • 1 cup fried shallots store-bought options work
  • 1 bunch fresh cilantro optional

Instructions
 

Preparation

  • In a mixing bowl, combine coconut milk, red curry paste, minced garlic, and ginger. Whisk until smooth, then add the shrimp and marinate for 15-20 minutes.
  • Thread shrimp, bell peppers, red onion wedges, and green beans onto skewers, alternating for color.
  • Preheat your grill over medium-high heat.
  • Grill the skewers for 2-3 minutes on each side until shrimp are pink and vegetables are tender.
  • In a separate pan, heat oil and fry shallots until golden, about 3-5 minutes. Drain on paper towels.
  • Plate the skewers hot, sprinkle crispy shallots on top, and garnish with cilantro.
