Filling

Preparation

  • Preheat the oven to 350°F (175°C) and lightly grease a 12-count mini muffin pan.
  • Combine flour, baking powder, sugar, egg, vanilla extract, and softened butter in a stand mixer. Mix until dough forms.
  • Press 1-2 tablespoons of dough into each muffin cup.
  • Bake the cookie bases for 10 minutes until lightly golden brown, then bake an additional 5-8 minutes.
  • Remove from the oven and place a mini peanut butter cup in the center of each cookie while they're still warm.

Notes

For an extra touch, drizzle with melted chocolate. Store in an airtight container for freshness.
