Chicken

  • 1 cup Onion (Diced) Green onions are a milder substitute if desired.
  • 1/2 cup Cilantro Omit if not liked, or use parsley.

  • In a medium bowl, whisk together olive oil, lime juice, garlic, cumin, smoked paprika, salt, and pepper. Add the chicken thighs, ensuring they are well-coated. Cover and refrigerate for at least 30 minutes or up to 2 hours for maximum flavor.
  • Preheat your grill or a heavy skillet to medium-high heat.
  • Remove the chicken from the marinade and place it on the grill. Cook for 5-6 minutes on each side until the internal temperature reaches 165°F.
  • Warm the corn tortillas on the grill or in a dry skillet for about 30 seconds on each side.
  • Slice the cooked chicken into strips. Place on each tortilla, top with diced onion and fresh cilantro, and finish with a squeeze of lime juice.
