Ingredients
  

For the Mushroom Mixture

  • 8 oz Mushrooms shiitake, cremini, or portobello
  • 2 tbsp Olive Oil can substitute with avocado oil
  • 2 cloves Garlic minced
  • 1 tsp Dried Thyme or fresh thyme if available
  • to taste Salt
  • to taste Black Pepper

For the Toast Base

  • 1 cup Mozzarella Cheese shredded, can mix with aged cheddar or Gruyère
  • 4 slices Bread e.g., baguette or sourdough

Directions

  • Preheat your oven to 400°F (200°C).
  • Heat a splash of olive oil in a skillet over medium heat. Add minced garlic and sauté for 1-2 minutes until fragrant.
  • Mix in your mushrooms, thyme, salt, and pepper, cooking for about 5-7 minutes until the mushrooms are tender.
  • Arrange thick slices of your chosen bread on a baking sheet. Optionally, lightly toast for a few minutes.
  • Generously spoon the mushroom mixture onto each slice of bread and top with shredded mozzarella.
  • Bake for 10-12 minutes until the cheese is bubbly and golden brown.
  • Remove from the oven and enjoy warm, garnished with fresh parsley or chili flakes if desired.

Notes

These toasts can be customized with your favorite cheeses and toppings for a personal touch. Leftovers can be stored in the fridge for up to 3 days.
