For the Puff Pastry

  • 1 package Puff Pastry High-quality, frozen pastry for best results.

For the Custard Filling

  • 100 g Caster Sugar Sweetens the custard; granulated sugar can be a replacement.
  • 50 g Corn Starch Thickens custard; can substitute with flour.
  • 4 large Egg Yolks For richness; can use aquafaba for vegan.
  • 500 ml Milk Forms custard's base; coconut milk is a dairy-free option.
  • 2 tsp Vanilla Bean Paste Infuses flavor; vanilla extract can substitute.
  • 50 g Unsalted Butter Enriches flavor; use dairy-free butter for vegan.

For the Topping

  • 50 g Powdered Sugar Optional for a sweet finish.

Preparation Steps

  • Preheat the oven to 150°C (300°F).
  • Thaw puff pastry sheets, pierce with a fork, cover with parchment, and bake for 20 minutes until golden. Cool completely.
  • Trim the cooled pastry sheets to fit a 9-inch square tin.
  • In a bowl, whisk caster sugar and corn starch, add egg yolks, then slowly stir in hot milk. Cook over medium-high heat for about 5-6 minutes until thick, stirring constantly. Remove from heat and mix in butter until melted.
  • Line the tin with parchment. Place the first pastry sheet, pour custard over it, then place the second pastry sheet on top.
  • Cover and refrigerate overnight to let the custard set.
  • Lift from the tin and cut with a serrated knife. Dust with powdered sugar before serving.

Notes

Use high-quality ingredients and chill overnight for the best results. Add fresh berries for extra flavor and color.
