Ingredients
  

For the Dough

  • 4 cups all-purpose flour or gluten-free blend
  • 1/4 cup sugar can use coconut sugar
  • 2 teaspoons instant yeast
  • 1 teaspoon salt
  • 1 cup plant-based milk almond or oat milk
  • 1/4 cup oil melted coconut or vegetable oil

For the Filling

  • 1/2 cup pistachio cream or pistachio butter

For the Glaze

  • 1 cup powdered sugar or maple syrup

Procedure

  • In a large mixing bowl, combine flour, sugar, yeast, and salt. Pour in warmed plant-based milk and oil, mixing until a soft dough forms. Knead for about 10-12 minutes until the dough is smooth and elastic.
  • Transfer the dough into a greased bowl, cover it with a clean cloth, and let it rise in a warm area until doubled in size, which should take about 1-1.5 hours.
  • Once the dough has risen, roll it out on a floured surface into a rectangle. Spread the pistachio cream evenly over the dough and sprinkle sugar and cinnamon if desired. Roll the dough tightly and cut it into scrolls.
  • Place the scrolls in a baking dish, cover them, and allow them to rise again until puffed, approximately 30-45 minutes.
  • Preheat your oven to 350°F (175°C) and bake the rolls for 25-35 minutes, or until they are golden brown and fragrant.
  • After baking, let the rolls cool slightly before drizzling with glaze. Serve warm for the best experience!

Notes

For an added crunch, sprinkle crushed pistachios on top before serving.
