Ingredients
  

For the Salmon

  • 4 fillets Salmon firm tofu is a great vegan substitute
  • 4 cloves Garlic fresh garlic is preferred
  • 1 medium Lemon halved, lime can be used for a twist
  • 1 tablespoon Oregano fresh herbs preferred
  • 1 teaspoon Paprika smoked paprika recommended
  • 1/2 teaspoon Red Pepper Flakes optional, adjust to taste
  • 2 tablespoons Olive Oil extra virgin preferred
  • 1 teaspoon Fish Sauce optional for umami

For the Potatoes

  • 1.5 pounds Baby Potatoes tender when roasted, sweet potatoes can be a substitute

For the Topping

  • 1 cup Feta Cheese vegan feta for dairy-free
  • 1/2 cup Olives green olives recommended
  • 2 tablespoons Champagne Vinegar can substitute with white wine vinegar

Instructions
 

Directions

  • Preheat your oven to 425°F.
  • Toss halved baby potatoes with olive oil, kosher salt, and black pepper. Spread them on a baking sheet alongside halved lemons and smashed garlic. Roast for 20 minutes until the potatoes are tender and lightly browned.
  • Mix olive oil, chopped garlic, oregano, smoked paprika, red pepper flakes, salt, and pepper in a bowl. Coat your salmon fillets generously in this delightful marinade.
  • Push the roasted potatoes aside and place the salmon skin-side down. Add pats of butter on top, and arrange lemon slices for extra zest. Roast for another 10-20 minutes until the salmon flakes easily.
  • Prepare the dressing by whisking together olive oil, chopped parsley, oregano, basil, olives, and champagne vinegar.
  • Serve the salmon and potatoes, crumble feta over the top, drizzle with the dressing, and garnish with fresh arugula.

Notes

For an extra burst of freshness, add a squeeze of fresh lemon juice before serving.
