  • 2 tablespoons Red Curry Paste adjust according to spice preference
  • 4 cups Chicken Broth can substitute with vegetable broth
  • 1 cup Water adjust for desired thickness
  • 2 tablespoons Lime Juice can substitute with lemon juice
  • 6 ounces Rice Noodles can swap with egg noodles
  • 1 can Coconut Milk light coconut milk is an option
  • 2 cups Shredded Chicken leftover rotisserie chicken works best

For Garnish

  • 1 cup Fresh Basil any fresh herbs available can enhance flavor
  • 0.5 cup Cilantro optional
  • 3 tablespoons Scallions chopped; green onions work well

Instructions
 

Cooking Steps

  • In a large pot, warm olive oil over medium-high heat. Add chopped onion and sauté for about 5 minutes until softened and translucent.
  • Stir in fresh ginger, minced garlic, and red curry paste. Cook for 30 seconds, allowing the mixture to become fragrant.
  • Pour in chicken broth, water, lime juice, and rice noodles. Increase heat to high and bring everything to a gentle boil.
  • Mix in coconut milk and shredded chicken. Lower the heat to medium-low and allow the soup to simmer for about 10 minutes.
  • Add fresh basil, cilantro, and chopped scallions, and stir well. Season with salt and pepper to taste.
  • Ladle the soup into bowls and serve immediately, garnishing with lime wedges if desired.
