How to Make Chocolate-Dipped Peanut Butter Buckeye Balls

  • In a medium bowl, combine creamy peanut butter, powdered sugar, softened butter, and vanilla extract. Use a hand mixer until the mixture is smooth and well-blended, around 2-3 minutes.
  • If you’re using crushed pretzels for a salty crunch, gently fold them into the peanut butter mixture.
  • Dampen your hands slightly to prevent sticking. Roll the peanut butter mixture into bite-sized balls (about 1 inch in diameter) and place them on a parchment-lined baking sheet.
  • Pop the baking sheet in the freezer for about 1-2 hours until the balls are firm.
  • In a microwave-safe bowl, add chocolate chips and vegetable oil. Microwave in 15-20 second intervals, stirring between each session until the chocolate is smooth.
  • Grab a peanut butter ball and dip one end into the melted chocolate, ensuring it’s fully coated, then carefully place it back on the baking sheet.
