Chicken

  • 4 pieces chicken cutlets Grilled chicken can be used for a lighter option.
  • 1 cup all-purpose flour Gluten-free flour works as a substitute.
  • 1 cup panko crumbs Regular breadcrumbs yield less crunch.
  • 2 eggs No substitute recommended.

Sandwich

  • 2 hearts romaine Kale can be used for variety.
  • 2 baguettes French Ciabatta or sourdough can be used as alternatives.

Preparation

  • Prepare Dressing: In a medium bowl, whisk together the full-fat mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, Parmesan cheese, minced garlic, salt, and pepper until smooth. Reserve a small amount for tossing the chopped romaine later.
  • Prep Chicken: Pound the chicken cutlets to an even thickness for more uniform cooking. Season generously with salt and pepper.
  • Set Up Breading Station: Arrange three shallow dishes. In the first, mix together all-purpose flour and paprika. In the second, whisk the eggs until well combined. In the last dish, combine panko crumbs, regular breadcrumbs, Parmesan, and your favorite seasonings.
  • Fry Chicken: Heat oil in a frying pan over medium heat until hot (about 350°F). Dredge each chicken cutlet first in the flour mixture, then dip into the eggs, and finally coat it in the breadcrumb mixture. Fry each cutlet for 4-5 minutes per side until golden brown and fully cooked. Once done, let them drain on a wire rack.
  • Assemble Sandwich: Slice the baguettes in half and spread the reserved dressing on each side. Layer the fried chicken, top with chopped romaine, and sprinkle extra Parmesan for a finishing touch.

Notes
