- 8 oz Cream Cheese Make sure it's softened.
- 1 can Rotel Tomatoes Can substitute with fire-roasted or diced tomatoes.
- 2 cups Shredded Cheddar Cheese Consider Monterey Jack as an alternative.
- 1 tsp Garlic Powder Fresh minced garlic can work in place.
- to taste Salt

- 1/4 cup Fresh Herbs (Parsley, Chives, or Cilantro) Omit if you're in a hurry.
- to taste Smoky Paprika or Harissa Optional, modify according to spice tolerance.

Instructions
Preparation
- In a large skillet, add the spicy Italian sausage and cook over medium-high heat for about 5–7 minutes, stirring occasionally until fully browned and crumbly. Drain any excess fat.
- In a mixing bowl, whisk the softened cream cheese and Rotel tomatoes together until smooth and creamy.
- Add the cooked sausage, shredded cheddar cheese, garlic powder, salt, and black pepper to the creamy mixture. Stir gently until all ingredients are well integrated.
- Transfer the mixture to a large pot or an oven-safe dish and cook over low heat for 15–20 minutes, stirring occasionally until the cheese has fully melted.
- Once heated through, garnish with fresh herbs and a sprinkle of smoky paprika or harissa. Serve immediately.
Notes
Cream cheese must be fully softened before mixing for a smooth texture. You can prepare the dip a day in advance and store it in the fridge. Reheat before serving.
