  • 1 cup Sharp Cheddar Cheese Feel free to swap in Gouda
  • 1 cup Mozzarella Cheese Can use Provolone for a twist
  • 1 teaspoon Salt
  • 1 teaspoon Garlic Powder Fresh minced garlic can be used

  • Preheat the oven to 400°F (200°C) and grease your mini muffin tins.
  • Blend the tapioca flour, whole milk, eggs, vegetable oil, cheddar cheese, mozzarella cheese, salt, and garlic powder until smooth.
  • Fill each muffin cup approximately ¾ full with the batter.
  • Bake for 19-20 minutes until golden brown and puffy.
  • Cool for a few minutes in the tin before transferring to a wire rack.
