Baba Ganoush

  • 2 tbsp Olive Oil Enhances creaminess and smooth blending; consider avocado oil as a replacement
  • 1 clove Garlic Minced; garlic powder (1/4 tsp) works if you’re out of fresh garlic
  • 1 each Lemon Juice Brings brightness to the dish; apple cider vinegar makes a suitable substitute
  • Salt and Pepper To taste

  • 1 cup Assorted Fresh Vegetables Choose from cucumbers, tomatoes, bell peppers, or any seasonal favorites

Preparation Steps

  • Preheat your oven to 400°F (200°C).
  • Slice the medium eggplant in half and score the flesh. Drizzle with olive oil and a sprinkle of salt, then place cut-side down on a parchment-lined baking sheet. Roast for about 25-30 minutes.
  • Once roasted, allow the eggplant to cool for a few minutes, then scoop the flesh into a bowl, discarding the skins.
  • To the bowl with roasted eggplant, add tahini, minced garlic, lemon juice, olive oil, salt, and pepper. Blend ingredients together until smooth and creamy.
  • Chop your assortment of fresh vegetables into bite-sized pieces.
  • Slice your bagels in half and toast them until they’re golden brown.
  • Spread your baba ganoush over each toasted bagel half, and top with chopped fresh veggies. Optionally drizzle with extra olive oil.

Notes

Add a sprinkle of fresh herbs like parsley or dill for extra flavor! Assemble the bagels right before serving to keep the vegetables crisp.
