  • 3 pounds Pork Belly Choose a cut with good meat to fat ratio.
  • 1 tablespoon Salt Kosher salt preferred.
  • 1 teaspoon Black Pepper Freshly cracked for flavor.

For the Braising Liquid

  • 1 cup White Wine A dry variety you enjoy drinking.
  • 2 cups Chicken Broth Low-sodium preferred.
  • 4 cloves Garlic Minced.

For the Aromatics

  • 1 medium Onion Chopped.
  • 1 teaspoon Thyme Fresh or dried.
  • 1 unit Bay Leaves 1 or 2 leaves.

Optional Add-Ins

  • 2 cups Mushrooms Sliced.
  • 1 large Carrot Chopped.

Preparation Steps

  • Season your pork belly generously with salt and pepper.
  • In a hot skillet, sear the pork belly on all sides until golden brown, about 8-10 minutes.
  • Sauté the chopped onion and minced garlic in the same skillet for 2-3 minutes until fragrant.
  • In your slow cooker, add the seared pork belly, sautéed onion and garlic, thyme, bay leaves, white wine, and chicken broth. Stir gently.
  • Set your slow cooker to low and let it cook for 6-8 hours.
  • About an hour before it's done, add the sliced mushrooms and chopped carrots.
  • Check for doneness; the pork should be fork-tender.
  • Serve hot over rice or alongside roasted vegetables.

Notes

Consider sprinkling fresh thyme leaves before serving for extra flavor.
