How to Make Creamed Spinach Bake

  • In a medium saucepan, melt 2 tablespoons of butter and 1 tablespoon of olive oil over medium heat for about 2 minutes.
  • Add 1 finely chopped onion and sauté for 3-4 minutes until it's translucent. Then add 2 minced garlic cloves and cook for an additional minute.
  • Whisk in 2 tablespoons of flour for about 1 minute until it's golden.
  • Gradually pour in 1 cup of milk and 1 cup of heavy cream while whisking. Stir until the mixture thickens, around 2-3 minutes.
  • Reduce heat to low, then stir in 12 ounces of fresh spinach in batches, mixing until well combined.
  • Mix half of the 1/2 cup shredded cheese into the spinach mixture until melted. Season with salt, pepper, and a pinch of nutmeg.
  • Transfer your creamy concoction into a greased baking dish, topping it with the remaining cheese.
  • Set under the broiler for 2-3 minutes, watching closely until the cheese is golden and bubbly.
