  • 1 cup Steel Cut Oats Avoid substitution with rolled oats due to different cooking times.
  • 3 cups Water or Almond Milk Avoid dairy milk to prevent burning.
  • 1 cup 100% Apple Juice Substitute with water for a less sweet option.
  • 1/2 cup Chopped Pecans Use any nut or seed based on preference.
  • 1 tbsp Pumpkin Pie Spice Blend Optional; substitute with a mix of cinnamon, nutmeg, and ginger.

Steps

  • Set your Instant Pot to the sauté function and melt the unsalted butter.
  • Add diced honey crisp apples, ground cinnamon, and a pinch of salt; sauté for about 4-5 minutes until the apples are tender and fragrant. Reserve half for topping.
  • Spritz the stainless steel liner with oil or butter to prevent sticking.
  • Add steel-cut oats, water or almond milk, 100% apple juice, and the remaining sautéed apples to the pot. Stir gently to combine.
  • Lock the lid in place and cook on manual high heat for 10 minutes. Once finished, perform a quick-release of pressure.
  • Open the lid and stir the oatmeal. Mix in chopped pecans and optional maple syrup for extra sweetness.
  • Dish out the oatmeal into bowls, topping each with additional sautéed apples, crushed pecans, and a drizzle of milk if desired.

Notes

Store leftover oatmeal in an airtight container in the fridge for up to 3 days. Reheat as needed with a splash of water or almond milk.
