For the Broth

  • 4 cups Beef Broth Choose low-sodium.
  • 2 tablespoons Tomato Paste Adds depth and richness.
  • 2 tablespoons Worcestershire Sauce Enhances flavor complexity.

For Seasoning

  • 1 teaspoon Thyme Fresh or dried.
  • 1 teaspoon Rosemary Fresh or dried.
  • 2 leaves Bay Leaves Remember to remove before serving!
  • 4 cloves Garlic Minced.

Preparation Steps

  • Pat the beef cubes dry and season with salt and pepper. Lightly coat the beef in flour.
  • Heat olive oil in a skillet over medium-high heat. Brown each piece of beef for 3-4 minutes on each side, then transfer to the crockpot.
  • Sauté chopped onion and minced garlic in the same skillet for 2-3 minutes, then add to the crockpot.
  • Whisk together beef broth, tomato paste, Worcestershire sauce, thyme, and rosemary in a bowl. Pour over the beef and onions.
  • Layer in the carrots and potatoes, and toss in the bay leaves.
  • Cover and cook on HIGH for 4-5 hours or LOW for 7-8 hours until beef is fork-tender and veggies are cooked.
  • Remove bay leaves, taste, and adjust seasoning with additional salt and pepper if needed. Serve hot.

Notes

Optional: Serve with crusty bread for dipping into the rich, savory broth.
