  • 1 cup Tomato Sauce Marinara or homemade are good choices.

For the Cheese

  • 1 cup Shredded Mozzarella Can substitute with cheddar or dairy-free cheese.

For the Toppings

  • 1 cup Vegetable Toppings e.g., mushrooms, peppers, spinach.
  • 1 cup Meat Toppings e.g., pepperoni.

Cooking Instructions

  • In a large bowl, combine the eggs with salt, pepper, and Italian seasoning. Whisk until the mixture is smooth and airy, about 1-2 minutes.
  • Place a non-stick skillet or oven-safe dish on medium heat. Once hot, pour in the egg mixture evenly, allowing it to fill the pan.
  • Let it cook for about 5-7 minutes until the edges begin to set and the center is still slightly soft.
  • Carefully spread a layer of tomato sauce over the cooked egg base.
  • Generously top the sauce with shredded mozzarella cheese, then add chosen vegetable and meat toppings on top.
  • Transfer your skillet to the preheated oven at 375°F (190°C) and bake for 10-15 minutes until the cheese is melted and bubbly.
  • Once baked, remove from the oven and garnish with fresh basil or parsley. Cut into squares or wedges and enjoy!
