Ingredients
  

  • 1 cup quinoa rinsed
  • 2 cups water or vegetable broth for cooking quinoa
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 cup bell pepper red or yellow, diced
  • 1 small red onion finely chopped
  • 1/2 cup Kalamata olives sliced
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • to taste salt for seasoning
  • to taste pepper for seasoning

Instructions
 

  • In a medium saucepan, combine quinoa with water or vegetable broth. Bring to a boil, reduce heat, cover, and simmer for 15 minutes until fluffy. Allow to cool.
  • While the quinoa cooks, halve the cherry tomatoes, dice the cucumber and bell pepper, finely chop the red onion, and slice the Kalamata olives.
  • In a small bowl, whisk together olive oil, lemon juice, oregano, salt, and pepper.
  • In a large mixing bowl, combine all prepared vegetables and crumbled feta cheese. Once quinoa has cooled, add to the bowl and mix gently.
  • Pour the dressing over the salad, gently tossing until combined. Add parsley last and mix again. Let it sit for 15 minutes before serving.

Notes

Store leftovers in an airtight container for up to 3 days. For longer storage, freeze without dressing for up to 3 months.
