Ingredients
  

Dressing

  • 1 cup mayonnaise or plain yogurt as a substitute
  • 2 tablespoons white wine vinegar or apple cider vinegar
  • 1 clove garlic minced; use garlic powder if fresh isn't available
  • 1 teaspoon salt
  • 1 teaspoon black pepper

Salad

  • 2 cups cooked chicken breast shredded or cubed; rotisserie chicken is a shortcut
  • 1 large cucumber firm, diced
  • 1 large red bell pepper diced
  • 1/2 medium red onion finely diced

Instructions
 

Preparation

  • In a small bowl, combine mayonnaise, white wine vinegar, minced garlic, salt, and black pepper. Mix until the mixture is smooth and creamy.
  • In a large mixing bowl, add the cooked chicken, then pour the dressing over it. Gently fold in diced cucumber, red bell pepper, and red onion until everything is beautifully coated.
  • Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  • Before serving, optionally add fresh herbs and a wedge of lemon. Serve it on croissants or lettuce.

Notes

Allow the salad to rest in the refrigerator for at least 30 minutes to enhance flavor. Use leftover chicken or rotisserie chicken for convenience. Adjust seasoning before serving if needed.
