  • 2 tbsp freshly squeezed lemon juice Balances sweetness with a fresh, acidic note. Substitution: Lime juice can be used for a different citrus twist.
  • 1 tbsp honey or maple syrup Sweetens the dressing naturally. Note: Adjust sweetness to taste; agave syrup is also a good vegan alternative.

Preparation

  • Start by peeling the navel oranges and grapefruit, carefully removing the bitter white pith. Then, segment the fruit into bite-sized pieces to showcase their beautiful colors.
  • In a large bowl, layer the fresh baby spinach leaves as the vibrant base, adding half of the citrus segments over the top for that eye-catching contrast.
  • In a small bowl, whisk together the extra virgin olive oil, freshly squeezed lemon juice, honey (or maple syrup), and spirulina powder until the mixture is smooth and well-blended.
  • Drizzle the dressing over the spinach and citrus mixture, tossing gently to combine. Be careful not to crush those delicate citrus segments!
  • Top the salad with the remaining citrus segments for added visual appeal. If you’re feeling adventurous, sprinkle some nuts or seeds on top for that extra crunch.
  • Serve the salad immediately to appreciate the bright, refreshing flavors at their best!

Notes

Optional: Add sliced avocado for creaminess. Store any leftovers in an airtight container for up to 2 days, keeping the dressing separate to maintain crispness and fresh flavor.
