Ingredients
  

For the Chicken

  • 2 pieces Chicken Breasts Can substitute with chicken thighs for extra moisture.
  • 1 teaspoon Salt
  • 1 teaspoon Black Pepper

For the Rice

For the Sauce

  • 4 tablespoons Butter Can swap for olive oil for a lighter option.
  • 2 tablespoons Olive Oil

  • 1/2 cup Dry White Wine Can replace with more chicken broth and a splash of vinegar.
  • 2 tablespoons Lemon Juice Can substitute with lime juice.
  • 1 cup Parmesan Cheese Preferably freshly grated.

For Garnish

  • 2 tablespoons Fresh Parsley Chopped.

Cooking Instructions

  • Season the chicken breasts with salt and pepper, then dredge them in all-purpose flour. Heat a skillet with butter and olive oil, and cook the chicken for about 3-4 minutes on each side until golden brown. Remove and set aside.
  • In the same skillet, melt another 2 tablespoons of butter. Add minced fresh garlic and sauté for a brief moment. Stir in the long-grain white rice, toasting it for about 2 minutes until slightly translucent.
  • Pour in the chicken broth, add red pepper flakes, and bring the mixture to a boil. Cover with a lid and let it simmer for 15 minutes without lifting the lid to keep the steam inside.
  • In a separate pan, melt the remaining butter. Add more minced garlic, pour in the dry white wine, and reduce for a couple of minutes. Stir in the remaining chicken broth and lemon juice, allowing it to simmer for another 2 minutes.
  • Once the rice is cooked, place the chicken on top of it. Pour the scampi sauce over the chicken, cover, and let it cook for an additional 5 minutes to infuse the flavors.
  • Stir in freshly grated Parmesan cheese and chopped parsley. Allow the dish to rest for about 5 minutes before serving.

Notes

For an extra pop of color, garnish with additional parsley before serving. Allowing the Easy Chicken Scampi to rest for 5 minutes enhances flavor blending.
