Ingredients
  

For the Fajitas

  • 1 pound Large Shrimp use large shrimp for optimal texture
  • 1 medium Red Bell Pepper substitute with green bell pepper if needed
  • 1 medium Yellow Bell Pepper can be replaced with any preferred pepper
  • 1 medium Red Onion yellow or white onion can be used as an alternative

For the Seasoning

  • 2 tablespoons Olive Oil can substitute with avocado oil
  • 1 tablespoon Chili Powder adjust based on heat preference
  • 1 teaspoon Cumin reduce if unavailable
  • 1 teaspoon Garlic Powder or use 2-3 cloves fresh minced garlic
  • 2 tablespoons Lime Juice fresh lime preferred
  • to taste Salt
  • to taste Pepper

For Garnishing

  • 1/4 cup Fresh Cilantro omit if not preferred
  • 1 whole Lime Wedges for serving

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
  • Combine large shrimp, sliced red and yellow bell peppers, and red onion in a large bowl. Toss together gently.
  • Whisk together olive oil, chili powder, cumin, garlic powder, lime juice, salt, and pepper in a small bowl.
  • Pour the seasoning mix over the shrimp and vegetables. Toss everything together until evenly coated.
  • Spread the mixture evenly on the lined baking sheet in a single layer.
  • Bake in the oven for 10-12 minutes until shrimp are pink and opaque.
  • Remove from the oven, let cool slightly, and serve wrapped in warm tortillas with cilantro and lime wedges.

Notes

For an extra kick, drizzle with extra lime juice before serving.
