  • 1.5 cups Long-Grain White Rice brown rice is a nutritious alternative
  • 3 cups Chicken Broth swap for vegetable broth for vegetarian

For the Hearty Mix

  • 1 can Black Beans (drained) canned lentils for plant-based twist
  • 1 cup Frozen Corn fresh corn is a seasonal substitute

Cooking Instructions

  • Heat olive oil in a large pot over medium-high heat. Add chicken pieces and cook until golden brown, around 5-6 minutes.
  • Add diced onion and minced garlic. Sauté until onion is soft and fragrant, roughly 2-3 minutes.
  • Stir in long-grain white rice until coated with chicken and aromatics.
  • Pour in chicken broth, drained black beans, frozen corn, diced tomatoes, and spices. Mix well.
  • Bring to a gentle boil, reduce heat to low, cover, and simmer for 18-20 minutes until rice is tender.
  • Remove from heat and sprinkle cheese on top. Cover for 2-3 minutes until cheese melts.

Notes

Serve topped with fresh cilantro, diced avocado, or a squeeze of lime for extra vibrancy.
