How to Make Hearty Comforting Beet & Carrot Lentil Dahl

  • Prepare Ingredients: Begin by washing, peeling, and cubing the beets and carrots. Rinse the lentils thoroughly until the water runs clear, ensuring they’re free of grit.
  • Sauté Aromatics: In a large pot, heat some oil over medium heat. Add the minced garlic and freshly grated ginger, sautéing for about 2 minutes until fragrant and slightly golden.
  • Add Vegetables: Stir in the cubed beets and carrots. Cook them for around 5 minutes, letting them soften while keeping their vibrant colors.
  • Incorporate Lentils and Liquids: Pour in the rinsed lentils along with vegetable broth, coconut milk, and curry powder. Stir and bring to a gentle boil before reducing the heat to a simmer.
  • Simmer: Let your dahl simmer uncovered for about 20 minutes until the lentils are tender but not mushy. Add more broth if needed.
