For the Dahl

  • 1 cup Red Lentils Rinsed thoroughly until water runs clear
  • 2 cups Beets Cubed; using roasted beets adds flavor
  • 2 cups Carrots Cubed; can substitute with sweet potatoes
  • 1 can Coconut Milk Adds creamy richness
  • 4 cups Vegetable Broth Enhances flavor
  • 2 tablespoons Curry Powder Essential spice blend
  • 2 cloves Garlic Minced; fresh is recommended
  • 1 tablespoon Ginger Freshly grated preferred
  • 2 tablespoons Lime Juice Use fresh for best taste
  • to taste Salt Essential seasoning
  • to taste Pepper Essential seasoning

Instructions
 

Preparation

  • Begin by washing, peeling, and cubing the beets and carrots. Rinse the lentils thoroughly until the water runs clear, ensuring they’re free of grit.
  • In a large pot, heat some oil over medium heat. Add the minced garlic and freshly grated ginger, sautéing for about 2 minutes until fragrant and slightly golden.
  • Stir in the cubed beets and carrots. Cook them for around 5 minutes until they soften slightly.
  • Pour in the rinsed lentils along with vegetable broth, coconut milk, and curry powder. Stir everything together and bring to a gentle boil before reducing the heat to a simmer.
  • Let your dahl simmer uncovered for about 20 minutes or until lentils are tender. Add more broth if needed.
  • Remove the pot from heat and gently stir in the fresh lime juice. Serve warm and enjoy!
