  • 1 cup Unsalted Butter Softened, not melted
  • 1/2 cup Confectioner’s Sugar Primary sweetener for coating
  • 1/4 cup Lemon Juice Fresh preferred
  • 1 tablespoon Lemon Zest Use fresh zest for best results
  • 2 cups All-Purpose Flour Can substitute with whole wheat flour
  • 1/4 teaspoon Salt

For Rolling

  • 1 cup Powdered Sugar For rolling the cookies

Steps to Prepare

  • Preheat the oven to 350°F (175°C) and line two baking trays with parchment paper.
  • Beat the softened butter with the confectioner’s sugar in a large bowl until light and fluffy.
  • Mix in the fresh lemon juice until combined.
  • In a separate bowl, whisk together the all-purpose flour, lemon zest, and salt.
  • Gradually add the dry mixture to the butter mixture, stirring until a soft dough forms.
  • Scoop the dough using a cookie scoop or tablespoon and form them into balls.
  • Place the dough balls on the prepared trays, spacing them apart.
  • Bake for 13-15 minutes or until the cookies are lightly golden on the bottom.
  • Cool the cookies for about 5 minutes before rolling each in powdered sugar, then transfer to a cooling rack.
  • Once cool, roll the cookies in powdered sugar again for an extra sweet finish.

Notes

Optional garnish with additional lemon zest for a refreshing touch.
