Preparation Steps

  • In a small bowl, mix warm water with active dry yeast. Let it sit for 5-10 minutes until frothy.
  • In a large bowl, combine all-purpose flour, salt, and Italian herbs. Whisk until well mixed.
  • Pour yeast mixture and olive oil into the dry ingredients. Stir until a shaggy dough forms.
  • Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  • Fold in shredded mozzarella and grated Parmesan, kneading just enough to distribute the cheese.
  • Place dough in a greased bowl, covered, and let it rise until doubled in size (1-2 hours).
  • Punch down gently, shape into a round boule, and let rise again for 30-45 minutes.
  • Preheat oven to 425°F (220°C). Prepare baking stone if available.
  • Score the top of the dough with a knife and bake for 25-30 minutes until golden brown.
  • Let the bread cool on a wire rack for at least 20 minutes before slicing.
