Ingredients
  

For the Fries

  • 2 lbs Large Russet Potatoes Yukon gold for a buttery twist
  • 2 cups Dill Pickle Juice Substitute vinegar if needed
  • 1 tsp Dried Dill Fresh dill can be used
  • 2 tbsp Extra-Virgin Olive Oil Can swap with neutral oils
  • 1 tsp Kosher Salt Adjust to taste
  • 1/2 tsp Black Pepper Adjust to taste
  • 1 tbsp Flaky Salt For serving
  • 2 tbsp Fresh Dill For serving

For the Spicy Chipotle Mayo

  • 2 large Egg Yolks Egg-free mayo for vegan option
  • 1 tbsp Lemon Juice Substitute with vinegar if needed
  • 1/2 cup Avocado Oil Use light olive oil or other neutral oils
  • 1 tsp Vinegar Omit for milder sauce
  • 1 tbsp Chipotle in Adobo Sauce Reduce for milder flavor
  • 1/2 tsp Paprika Smoked paprika adds unique flavor

Instructions
 

Preparation

  • Start by scrubbing, washing, and drying your large russet potatoes. Slice them into wedges or thin fries, depending on your preference.
  • Place the sliced potatoes in a bowl and cover them with dill pickle juice. Let them brine for 2 hours up to overnight. If short on time, soak for 20-30 minutes.
  • While the fries are soaking, combine egg yolks, lemon juice, salt, vinegar, and avocado oil in a mason jar. Use an immersion blender to mix until creamy.
  • Once your mayo is emulsified, stir in the chipotle in adobo sauce and paprika. Set aside to let the flavors meld.
  • Remove the potato wedges from the pickle juice, pat them dry, and toss with dried dill, olive oil, kosher salt, black pepper, and a splash of pickle juice.
  • Transfer the seasoned potato mixture into the air fryer basket. Cook at 400°F for 20-25 minutes, flipping halfway, until golden brown and crispy.
  • Serve the fries hot, topped with flaky salt, fresh dill, and spicy chipotle mayo for dipping.

Notes

For perfect crispiness, ensure potatoes are patted dry before seasoning. Adjust the spice level in the mayo to match your preference.
