Ingredients
  

Caesar Dressing

  • 1/2 cup Mayonnaise
  • 1/4 cup Greek Yogurt
  • 1 tbsp Dijon Mustard
  • 1 tbsp Worcestershire Sauce
  • 1 tbsp Lemon Juice
  • 1/4 cup Grated Parmesan
  • 1 clove Minced Garlic
  • to taste Black Pepper
  • to taste Salt

Chicken Preparation

  • 2 pieces Chicken Cutlets or chicken thighs for extra flavor
  • 1 cup All-Purpose Flour gluten-free flour can be used as an alternative
  • 2 large Eggs beaten
  • 1 cup Panko Crumbs or regular breadcrumbs
  • 1/2 cup Breadcrumbs or crushed crackers for gluten-free

Sandwich Assembly

  • 3 cups Romaine Hearts chopped
  • 2 pieces French Baguettes or ciabatta/sourdough
  • 1/4 cup Extra Parmesan for sprinkling

Preparation

  • In a bowl, mix mayonnaise, Greek yogurt, Dijon mustard, Worcestershire sauce, lemon juice, grated Parmesan, minced garlic, black pepper, and salt until smooth. Reserve some dressing for the salad.
  • Toss the chopped romaine with the reserved dressing and refrigerate it to keep it crisp and fresh.
  • Pound the chicken cutlets to an even thickness for uniform cooking. Season both sides generously with salt and black pepper.
  • Set up a breading station with flour, eggs, and breadcrumb mixtures on separate plates.
  • Heat oil in a frying pan over medium heat. Dredge chicken in flour, dip in egg, and coat with breadcrumbs. Fry until golden brown, about 4-5 minutes per side. Drain on a wire rack.
  • Slice the baguettes open, spread the creamy Caesar dressing inside, layer with the crispy chicken cutlet, and top with fresh Caesar salad. Serve immediately.

Notes

For optimal crunch, pound chicken cutlets to an even thickness before frying. Add salad just before serving to prevent sogginess.
