How to Make

  • Make Sugared Pecans: In a medium saucepan, combine chopped raw pecans, maple syrup, cinnamon, and a pinch of salt. Cook over medium heat, stirring constantly for about 5-7 minutes, until the syrup is mostly dry and the pecans are glossy and coated. Allow them to cool in a bowl.
  • Prepare Dressing: In a small mixing bowl, whisk together fresh squeezed orange juice, apple cider vinegar, olive oil, the remaining maple syrup, Dijon mustard, and kosher salt. Taste and adjust seasoning as needed, then set aside.
  • Assemble Salad: In a large serving bowl, add the spring mix as the base. Layer with sliced oranges, grapefruit, and pomegranate arils. Sprinkle the cooled pecans on top for an extra crunch. For optional indulgence, feel free to add some crumbled cheese or crispy bacon.
