Ingredients
  

For the Chicken

  • 4 pieces Boneless, skinless chicken breasts
  • 8 oz Boursin cheese Can substitute with cream cheese or herbed goat cheese

For the Coating

  • 1 cup Panko breadcrumbs Regular breadcrumbs can be used but will yield a denser crust
  • 1/2 cup Grated Parmesan cheese
  • 1/4 cup Chopped fresh parsley Can substitute with 1 teaspoon of dried parsley
  • 1 tablespoon Chopped fresh thyme 1 teaspoon of dried thyme can be used
  • 1 tablespoon Chopped fresh rosemary Dried rosemary can be used

For the Seasoning

  • 2 tablespoons Olive oil
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Salt
  • 1 teaspoon Pepper

For the Finish

  • 2 tablespoons Melted butter

Preparation

  • Preheat the oven to 375°F (190°C) and generously grease a baking dish.
  • Mix the panko breadcrumbs, grated Parmesan, parsley, thyme, rosemary, garlic powder, onion powder, salt, and pepper in a bowl.
  • Prepare the chicken breasts by slicing pockets to hold the creamy Boursin cheese and secure with toothpicks if desired.
  • Brush the stuffed chicken with olive oil then coat each breast in the breadcrumb mixture.
  • Place the coated chicken in the prepared baking dish and drizzle melted butter on top.
  • Bake for 30-35 minutes until the internal temperature reaches 165°F (74°C).
  • Allow the chicken to rest for a few minutes before serving, removing toothpicks if used.

Notes
